LET'S HAVE A LAUGH LEMON CAKE- 100 days of gratitude day 5 COOKING FOR FRIENDS

When I first started the 100 days of gratitude I really envisioned I would do it 100 days in a row…that didn’t happen but working on it.

I love cooking for friends. It’s such a joy to share food and a laugh.

I often use lemon bread/cake as the base for my strawberry shortcake. I often use blueberries in my lemon cake because I like the way they look.

This is a simple crowd pleasing recipe that takes only a few minutes to stir together and put in the oven.

JENNIFER’S LEMON BLUEBERRY LET’S HAVE A LAUGH CAKE

INGREDIENTS

  • 1 3/4 cups flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1/3 cup melted butter

  • 1 cup sugar

  • 2 eggs room temperature

  • zest from one large lemon

  • juice from one large lemon

  • 1/2 cup buttermilk room tempature

  • 1 tsp vanilla

  • 1 1/4 cups of fresh or frozen blueberries ( dusted in a little flour)

MIX

Mix these ingredients together. First by mixing the sugar and butter, then eggs ons at a time, vanilla, lemon juice, buttermilk, then dry ingredients.

Once it looks mixed.

FOLD

Fold in the blueberries

BAKE

Bake at 350 degrees for 60 minutes in a loaf plan that has been buttered and floured.
